INGREDIENTS:
- 1 cup ripe maracuya (passion fruit) puree (strain seeds out)
- 1- ½ cup fresh squeeze orange or tangerine juice
- 2 tablespoons lime
- 2 ½ tablespoons honey
- 1-1/2 to whole habenero or local spicy pepper
- 3 lbs. skirt steak or similar cut
- ¼ cup cilantro
- 1 tablespoon chipotle powder
- 1 tablespoon salt + extra to season
- pepper + extra to season
- 1 ½ teaspoon garlic powder
- 1 teaspoon coriander garlic
DIRECTIONS:
- Combine all spice ingredient s thoroughly: chipotle, garlic powder, coriander, salt pepper
- Combine liquid ingredients and habenero (maracuya, oj, lime, honey, hobenero)
- Rub steaks on both sides with spice mixture, put into Ziploc bag, and cover with combined liquids. Leave for at least 6 hours (24 is ideal) in the fridge
- Strain liquid from Ziploc bag and move to a small sauce pan, put on high heat until mixture has reduced by more than half. Turn off heat, add one tablespoon of butter, mix thoroughly. Let cool, taste for flavor quality. Depending on sweet or sourness of fruit, more honey, lime or salt may need to be added.
- Remove steaks, pat dry, lightly sprinkle with salt and pepper, and cook on grill. The grill should be very hot, as these steaks are very thin, they don’t need to cook long, but benefit greatly from some nice sear marks. The steaks can also easily be pan sautéed with just a touch of vegetable oil in a very hot pan.
- Remove steaks from heat, they shouldn’t take more than 5-10 minutes to cook depending on your temp. preference. Let steaks sit on cutting board for 5 min, cut crosswise in thin strips, across the grain to get the best texture out of the meat.
- Put meat into stainless steel bowl and pour reduced marinade over the top, toss.
- Grab some warm tortilla (and whatever else you like: avocado, sour cream, hot sauce), garnish thoroughly with cilantro, and enjoy!!
